Cooking at Home With Carolyn: Episode 2

On a cool, rainy day when you’re stuck in the house, sometimes you just need some comfort food. My favorite comfort food is soup. There is nothing like a warm bowl of yumminess to help warm the soul! In this recipe we’re going to focus on all the fresh spices that people seem to be ignoring in the grocery store.

Copy Cat Carrabba’s Sausage Lentil Soup (for 4-6 people)

*this recipe is also Gluten Free

Ingredients:
1lb Italian sausage (we like a little spice; so we like to get spicy Italian sausage)
1 large onion – chopped
1 stalk celery – chopped
1 large carrot – (the store only had a bag of baby carrots- we chopped up almost ½ the bag)
6 cups chicken broth
2 cans diced tomatoes – (the store only had one can, so we used one and chopped up a fresh one)
2-3 garlic cloves
16oz dried lentils
1 bunch basil
1 bunch oregano
6-8 bay leaves
1 bunch thyme
1 bunch parsley
1 cup water

Step 1: Grab a large pot and place all the chopped veggies in the pot

Step 2: Brown the Italian sausage

Step 3: After browning the sausage, add it to the large pot with the other ingredients. Let it cook down for about 20 min.

Step 4: Remove some of the stems and bay leaves – grab a bowl and enjoy!
