Cooking at Home with Elle – Tortilla Pie Recipe

Ever totally blank out on what to serve the kids for dinner? I do all the time, especially these days, since my formerly independent teens are trapped at home instead of being able to go out to dinner with friends. When it’s been a long day and I’m really not motivated to cook anything super complicated, the following recipe saves the day! Most kids like Mexican, and this recipe also allows you to sneak lots of fiber and some veggies into it as well, which is always a good thing! I can’t remember who first turned me onto tortilla pie, but it was years ago, and I’m eternally grateful, because it’s super easy and delicious. It’s also a good one to get the kids involved in helping because it’s fun to put together!

Ingredients:

  • 3 10” tortillas (I like to use the Mission high fiber ones to make it healthier and the kids never know the difference)
  • 1 can refried beans
  • Salsa at your preferred heat level (a few tablespoons per layer)
  • One small can of corn (not creamed, just corn in water), drained well
  • Shredded cheese – about three cups

Add ons: If I have leftover chicken, beef or ground beef, I’ll dice it up and throw that on too. We like to also use a small drained can of black olives. And, we like some avocados on top when it’s done, as well as sour cream and hot sauce.

Preheat your oven to 400. Spray a springform or straight sided pie pan with Pam. Place first tortilla on the bottom. Spread ½ can refried beans evenly over tortilla. Sprinkle evenly with ½ of the corn, meat if using, and olives if using. Dot this with salsa all over. Cover all of this with a layer of cheese- you can go thick (which my kids prefer as they LOVE cheese) or use just enough to cover. Put another tortilla on top. Press down lightly. Repeat beans, meat, corn, olives, cheese. Put the third tortilla on top and again, press down. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes. Remove and let cool for about ten minutes before cutting and serving. Top with whatever you like- diced avocados, more salsa, hot sauce, etc. Enjoy with a margarita or ice cold Corona if you’re an adult!
